Gingerbread

Our house is filled with the heady scent of gingerbread from an afternoon baking Christmas gifts for preschool teachers. Yum!

 

 

Gingerbread

 

125g butter, softened

100g (1/2 cup) soft brown sugar

125ml golden syrup

1 egg yolk

375g (2 1/2 cups) plain flour

1Tbs ground ginger

1tsp mixed spice

1tsp bicarb soda

 

 

Beat butter and brown sugar til pale and creamy.

Add golden syrup and yolk and mix in.

Stir in dry ingredients.

Turn onto a floured surface and knead until smooth.

Cover and let chill in fridge for 30mins.

Roll out to 1/2cm thickness, cut out shapes with cookie cutters.

Bake for approx 10mins in a low oven, (160 degrees C) till golden.

 

 

Best eaten warm from the oven.

I usually makes double the quantity because they never last long in this house. This gingerbread is beautifully spiced, soft and chewy. Great to package up as a gift. Enjoy!

 

 

Today is the last day of the school year and we are so excited about summer hols. Hubby is taking five weeks leave over Christmas and January so we'll be making the most of it...kayaking on the lake, bushwalking, rock climbing, BBQs, picnics, swimming and gardening. Can't wait!
